I learned how to make red snapper piccata at an Italian Cuisine cooking course at the Blair House Inn Cooking School. I was surprised how easy it was to make and fell in love with this flakey pan seared fish topped with a sauce of butter, lemon juice, and capers! It’s a delicious meal solution for any level cook and you can make it in 30 minutes or less!

Red Snapper Piccata Recipe

INGREDIENTS
- 4 fresh 6-ounce red snapper fillets, skin on
- 2 tablespoon olive oil
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- ½ cup flour for dredging
- 2 large eggs, beaten
- 1/4 cup dry white wine (optional)
- 2 tablespoons fresh lemon juice
- 2 tablespoons capers
- 2 tablespoons butter
- 2 tablespoons chopped parsley
INSTRUCTIONS
- Season the fillets with salt and pepper on both sides.
- Coat the fillets in flour and then dip in the egg wash.
- Saute the fish skin side down over high heat for about 2 minutes, then flip to cook for another 2 minutes. Cook one fillet at a time and set aside in foil to keep warm.
- Heat a medium saucepan over low heat, add lemon juice, capers, and butter. Stir in white wine, if you opt. Cook until the butter melts.
- Plate your fillets and pour sauce over the fish.
- Garnish with parsley and lemon slices and serve.
