Ice cream, milkshakes, and yogurt may sound scrumptious! However, if you are lactose intolerant like me, you may disagree.

At Dairy MAX’s Cooking with Caitlin pop-up dinner, Dr. Sonya Sloan and other members of the medical community shared the importance of dairy consumption and acknowledged the concerns of lactose intolerance. Like many audience members, I suffer from lactose intolerance and try to avoid dairy. But Dr. Sloan, an Orthopedic Surgeon, explained how to add dairy back into our diets through the use of lactose-free dairy products. She said daily dairy consumption could prevent bone density loss in minorities and women.

Thanks to Chef Caitlin, members of the Houston Academy of Nutrition & Dietetics and I sampled lactose friendly recipes from a nine-course tasting menu. She hosted three live cooking demos and provided the recipes for her tasting menu to share with our friends and family.

Out of the nine dishes, the Smoke Gouda Spoonbread caught my attention. It reminded me of my favorite potluck dish, cornbread casserole. That’s when I decided to blend Chef Caitlin’s Smoke Gouda Spoonbread recipe and my cornbread casserole recipe to make it my own: Smoked Gouda Cornbread Casserole. This is the perfect potluck dish when you are in a pinch and don’t have a lot of time to cook. The best part, the ingredients for this recipe are easy to remember which makes it a cinch when grocery shopping![/text_output][text_output]Serves: 8-10
Prep time: 15 minutes

Ingredients
  • 1 can Corn, whole kernels, drained
  • 1 can Corn, creamed
  • 1 box Cornbread mix, Jiffy Cornbread
  • 8 oz Sour Cream (or 1/2 cup of Greek yogurt)
  • ½ cup Butter, melted
  • 1 + ½ cups shredded Smoked Gouda, divided

  1. Preheat oven to 350 degrees
  2. In a mixing bowl combine the two cans of corn, cornbread mix, sour cream, melted butter, and 1 cup Smoked Gouda. Mix together until evenly combined.
  3. Pour the batter into a greased 9” X 9” or 11” X 9” baking pan.
  4. Place in oven and bake for 45 minutes. Remove pan and add ½ cup Smoked Gouda on top of the casserole. Bake for an extra 15 minutes or until center is set and the cheese on top is golden brown.
  5. Remove from the oven and cool.
  6. Slice or scoop and serve.
  7. Garnish with Pico de Gallo.

Note: You can substitute the type of cheese. I’ve made this with Extra Sharp Cheddar and it’s fantastic.  If you have a little more time, add a handful of cooked bacon (chopped), and a pinch of cayenne pepper to really up the flavor!
